We have just returned from a holiday in Madeira.  Geoff fixed up a gardening self watering system for the front and back gardens to ensure that everything survived whilst we were away.

However, every time we telephoned to speak to friends and family in the UK – you appear to have been suffering with rain, rain and more rain! 

We returned to find the flower pots water logged!  You never know what to do for the best in this country during the summer months. 

The  lettuce plants had bolted over the holiday to an award winning size and so it is time to combine the leaves with lovage and frozen peas to make a delicious soup. 

Take the leaves from a bolted lettuce(!) or from a supermarket lettuce.
6 leaves of lovage
5 large spring onions - sliced
1 tablespoon of Butter
250g. frozen peas
Chicken or vegetable stock to cover – use 2 cubes.
Salt and black pepper
Nutmeg to flavour. 

Melt the butter in a medium sized saucepan.  Add the onions and soften BUT do not allow them to burn.  Add the washed lettuce leaves and lovage. 

Add the frozen peas and salt/pepper to taste.  Cover with the stock cubes and water.  Simmer for 25 minutes and blitz with a blender stick. 

It is delicious hot or cold.  You can add a squeeze of lemon juice to enhance those garden flavours.  It freezes very well too!
